Easy Chicken Curry
Ingredients:
- 1 clove garlic, crushed
- 1 onion – sliced finely
- 2 tablespoons of Sharwood’s curry paste
- 500gms chicken thighs – remove the skin
- 1 large tin peeled tomatoes
- 1 cup broccoli florets
- 1 cup of cauliflower
- 1 cup fresh beans – cut into 3cm lengths
- 1 cup yellow squash – cut into cubes
- serves 4
Directions:
- Dry fry onion and garlic in a non stick pan.
- Add curry paste and simmer for one minute. (Remember to put the exhaust fan on!). Add chicken and brown.
- Add tomatoes, broccoli, cauliflower, beans and squash and simmer for 20-30 minutes, or until chicken is cooked and vegetables are tender.
