Curried Tuna and Pasta Salad

Ingredients

  • 3 x 125 gm sliced tuna packed in spring water
  • 500gms packet large shell pasta – cooked
  • 1 tablespoon curry powder
  • 1 ½ cups non fat yoghurt (flavoured with Dijon mustard to taste)
  • 1/3 cup mango chutney
  • 1 teaspoon turmeric
  • ¼ teaspoon cinnamon
  • pinch cayenne pepper
  • ½ cup raisins
  • ½ cup chopped spring onions
  • ½ cup diced celery
  • fresh ground black pepper to taste
  • serves 6

Directions:

  1. Toast curry powder lightly in a small non stick pan until fragrant.
  2. Transfer curry to a bowl and add yoghurt, chutney, turmeric, cinnamon and cayenne.
  3. In a large bowl combine tuna, raisins, chopped spring onions and cooled pasta.
  4. Add the dressing and toss to combine.
  5. Garnish with spring onions, snow pea sprouts and spring onion sprigs.
