Curried Tuna and Pasta Salad
Ingredients
- 3 x 125 gm sliced tuna packed in spring water
- 500gms packet large shell pasta – cooked
- 1 tablespoon curry powder
- 1 ½ cups non fat yoghurt (flavoured with Dijon mustard to taste)
- 1/3 cup mango chutney
- 1 teaspoon turmeric
- ¼ teaspoon cinnamon
- pinch cayenne pepper
- ½ cup raisins
- ½ cup chopped spring onions
- ½ cup diced celery
- fresh ground black pepper to taste
- serves 6
Directions:
- Toast curry powder lightly in a small non stick pan until fragrant.
- Transfer curry to a bowl and add yoghurt, chutney, turmeric, cinnamon and cayenne.
- In a large bowl combine tuna, raisins, chopped spring onions and cooled pasta.
- Add the dressing and toss to combine.
- Garnish with spring onions, snow pea sprouts and spring onion sprigs.
