Creole Prawns
Ingredients:
- 1/2 cup sliced red onion
- 1/2 cup sliced celery
- 1/2 cup sliced green pepper
- 1 clove garlic, crushed
- 1 large can whole tomatoes, peeled and chopped
- 1 teaspoon Worcestershire sauce
- 2 teaspoons chilli powder
- black pepper
- 1/2 teaspoon fresh oregano leaves, finely chopped
- 480gms prawns
- parsley for garnish
- 4 cups brown rice (cooked)
- serves 4
Directions:
- Dry fry onion and add all remaining ingredients and vegetables, except prawns.
- Bring to boil and then reduce heat and simmer for 30 minutes.
- Stir in prawns and cook for 5 minutes.
- Serve over rice and garnish with Italian parsley.
