Creole Prawns

Ingredients:

  • 1/2 cup sliced red onion
  • 1/2 cup sliced celery
  • 1/2 cup sliced green pepper
  • 1 clove garlic, crushed
  • 1 large can whole tomatoes, peeled and chopped
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons chilli powder
  • black pepper
  • 1/2 teaspoon fresh oregano leaves, finely chopped
  • 480gms prawns
  • parsley for garnish
  • 4 cups brown rice (cooked)
  • serves 4

Directions:

  1. Dry fry onion and add all remaining ingredients and vegetables, except prawns.
  2. Bring to boil and then reduce heat and simmer for 30 minutes.
  3. Stir in prawns and cook for 5 minutes.
  4. Serve over rice and garnish with Italian parsley.
