Chilli Pork Stir Fry

Ingredients:

  • 400gms light pork fillet (or veal)
  • 1 medium red pepper
  • 1 clove garlic, crushed
  • 1 tablespoon grated fresh ginger
  • 1 small fresh red chilli, finely chopped
  • 1/4 cup water
  • 1 tablespoon light soya sauce
  • 6 canned water chestnuts, sliced
  • 4 lettuce cups
  • serves 4

Directions:

  1. Cut pork and pepper into strips.
  2. Heat a non-stick wok. Add garlic, ginger, chilli and pork - stir fry until tender, remove from wok.
  3. Add pepper, stir fry until just tender, remove from wok.
  4. Add water and soya sauce to pan, boil until reduced to half. Return pork to pan, add pepper and water chestnuts. Stir fry until heated through. Serve in lettuce cups.
