Chicken Stroganoff
Ingredients:
- 500gm chicken fillets
- paprika (sweet hungarian)
- 1 large onion, sliced
- 200gm mushrooms, sliced
- 1 cup evaporated skim milk
- 1 tablespoon tomato paste
- serves 4
Directions:
- Slice chicken into thin strips. Lightly sprinkle with paprika. Cook until brown, remove chicken.
- Add onion to pan. Cook until softened, adding a little water, when necessary. Add mushrooms and cook for 2 minutes. Return chicken to pan.
- Blend yoghurt with tomato paste till smooth. Stir into chicken mixture and simmer for 5 minutes.
