Chicken Liver Salad
Ingredients:
- 1 1/2 cups English spinach
- 10 button mushrooms
- 1 tablespoon apple cider vinegar
- 100gms chicken livers
- fresh ground black pepper
- serves 1
Directions:
- Wash spinach and tear into small pieces (measure approx. 4 cups).
- Slice mushrooms and toss with spinach and apple cider vinegar in bowl.
- Trim all sinew from chicken livers and separate into two pieces. Pat dry and saute in non-stick pan until brown on the outside and slightly pink inside.
- Pour chicken livers over mushrooms and spinach and toss well with freshly ground black pepper. Serve warm.
