Chicken Liver Salad

Ingredients:

  • 1 1/2 cups English spinach
  • 10 button mushrooms
  • 1 tablespoon apple cider vinegar
  • 100gms chicken livers
  • fresh ground black pepper
  • serves 1

Directions:

  1. Wash spinach and tear into small pieces (measure approx. 4 cups).
  2. Slice mushrooms and toss with spinach and apple cider vinegar in bowl.
  3. Trim all sinew from chicken livers and separate into two pieces. Pat dry and saute in non-stick pan until brown on the outside and slightly pink inside.
  4. Pour chicken livers over mushrooms and spinach and toss well with freshly ground black pepper. Serve warm.
