Dinner Party Beef Fillet

Ingredients:

  • 2 kgs piece of fillet steak
  • 2 onions, sliced
  • 1 red capsicum, seeded and sliced
  • 1 green capsicum, seeded and sliced
  • 2 large zucchinis, sliced on diagonal
  • 1 large tomato, sliced
  • 2 cloves garlic, crushed
  • 1/2 teaspoon fresh oregano, chopped
  • 1/2 teaspoon fresh rosemary, chopped
  • 1/2 teaspoon fresh basil, chopped
  • serves 4-6

Directions:

  1. Trim all fat from fillet and slice meat at three inch intervals. (Slice only 3/4 way down meat).
  2. Saute all vegetables and herbs gently in a non-stick pan until tender, but still crisp.
  3. Pack vegetables into pockets in meat and place meat on a rack in baking dish. Pour over vegetable juices.
  4. Bake at 180C for 1 1/2 hours (well done), or as desired.
