Dinner Party Beef Fillet
Ingredients:
- 2 kgs piece of fillet steak
- 2 onions, sliced
- 1 red capsicum, seeded and sliced
- 1 green capsicum, seeded and sliced
- 2 large zucchinis, sliced on diagonal
- 1 large tomato, sliced
- 2 cloves garlic, crushed
- 1/2 teaspoon fresh oregano, chopped
- 1/2 teaspoon fresh rosemary, chopped
- 1/2 teaspoon fresh basil, chopped
- serves 4-6
Directions:
- Trim all fat from fillet and slice meat at three inch intervals. (Slice only 3/4 way down meat).
- Saute all vegetables and herbs gently in a non-stick pan until tender, but still crisp.
- Pack vegetables into pockets in meat and place meat on a rack in baking dish. Pour over vegetable juices.
- Bake at 180C for 1 1/2 hours (well done), or as desired.
