Lime & Basil John Dory

Ingredients:

  • 500gms John Dory or Silver Dory fillets
  • 1/2 cup lime juice
  • 1/2 cup lemon juice
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh chives
  • ground black pepper
  • serves 4

Directions:

  1. Marinate fish in remaining ingredients in a dish for 30 minutes.
  2. Line grill with lightly oiled foil and place fillets skin side down, cook under hot grill for 6 minutes. Do not turn. Baste with marinade during cooking.
