Baked Tandoor Style Fish

Ingredients:

  • 4 large cutlets or 4 whole fish - firm flesh
  • 4 tablespoons low-fat yoghurt
  • 2 teaspoons grated ginger
  • 1 1/2 teaspoons curry powder
  • 1/2 teaspoon sweet paprika
  • freshly ground pepper
  • 1/2 teaspoon fennel seeds
  • juice of half a lemon
  • serves 4

Directions:

  1. If using whole fish, gut and scale fish and cut off fins. Rinse inside of fish. Pat dry with towel and make four or five shallow cuts on either side to help fish cook evenly.
  2. In a small bowl, combine spices, yoghurt and lemon juice. Brush fish all over with this marinade, but it’s better if left to marinade in this mixture for a few hours.
  3. Pre-heat oven to 250C for ten minutes. Place fish on an oven rack resting in an oven dish and cook in pre-heated oven for 15-20 minutes.
  4. If you wish, turn fish once during cooking, but this is not necessary. Serve with fluffy rice.
