Stuffed Mushrooms
Ingredients:
- 12 large mushrooms
- 200gms low-fat cream cheese
- 125gms Silver Salmon
- 2 spring onions finely chopped
- 1/2 teaspoon cayenne pepper
- parsley
- 1/2 teaspoon mustard
- 1 clove garlic
- 1 tablespoon lemon juice
- 1 tablespoon capers
- serves 4-6
Directions:
- Wipe mushrooms and remove stems. Set caps to one side.
- Place stems and all ingredients except capers and parsley in blender until just blended together (Do not over blend). Stir in capers (capers can be blended if preferred)
- Fill each mushroom cap with mixture - sprinkle with capers to taste, place on serving dish and decorate with parsley.
- Serve with a green salad as a light meal - or use smaller mushrooms and serve with drinks.
