Stuffed Mushrooms

Ingredients:

  • 12 large mushrooms
  • 200gms low-fat cream cheese
  • 125gms Silver Salmon
  • 2 spring onions finely chopped
  • 1/2 teaspoon cayenne pepper
  • parsley
  • 1/2 teaspoon mustard
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • 1 tablespoon capers
  • serves 4-6

Directions:

  1. Wipe mushrooms and remove stems. Set caps to one side.
  2. Place stems and all ingredients except capers and parsley in blender until just blended together (Do not over blend). Stir in capers (capers can be blended if preferred)
  3. Fill each mushroom cap with mixture - sprinkle with capers to taste, place on serving dish and decorate with parsley.
  4. Serve with a green salad as a light meal - or use smaller mushrooms and serve with drinks.
