Spanish Paella

Ingredients:

  • 250gms quick cooking brown rice
  • 1 large onion, diced finely
  • 1 green capsicum, diced finely
  • 1 red capsicum, diced finely
  • 1 clove garlic, crushed
  • 400gms canned tomatoes, chopped
  • 1 1/2 cups vegetable stock
  • 1 teaspoon nutmeg
  • 1 red chilli, finely diced, seeds removed
  • sprinkle of tumeric
  • 1 tablespoon chopped Italian parsley
  • serves 4

Directions

  1. Dry fry onion, garlic, capsicum, tumeric and chilli in a large saucepan (add a little water to prevent burning).
  2. Add rice, mix well and cook 4 minutes, stirring constantly.
  3. Add tomatoes and stock, bring to the boil and simmer for 20 minutes, or until rice is tender and all liquid is absorbed.
  4. Sprinkle with Italian parsley. Serve with a green salad.
