Spanish Paella
Ingredients:
- 250gms quick cooking brown rice
- 1 large onion, diced finely
- 1 green capsicum, diced finely
- 1 red capsicum, diced finely
- 1 clove garlic, crushed
- 400gms canned tomatoes, chopped
- 1 1/2 cups vegetable stock
- 1 teaspoon nutmeg
- 1 red chilli, finely diced, seeds removed
- sprinkle of tumeric
- 1 tablespoon chopped Italian parsley
- serves 4
Directions
- Dry fry onion, garlic, capsicum, tumeric and chilli in a large saucepan (add a little water to prevent burning).
- Add rice, mix well and cook 4 minutes, stirring constantly.
- Add tomatoes and stock, bring to the boil and simmer for 20 minutes, or until rice is tender and all liquid is absorbed.
- Sprinkle with Italian parsley. Serve with a green salad.
