Spanish Omelette
Ingredients:
- 1 clove garlic, crushed
- 1 medium onion, finely chopped
- 2 cups mixed fresh vegetables
- 2 spring onions, sliced
- 1 tablespoon chopped parsley
- 2 eggs and 1 egg white
- 3 tablespoons water
- 1 tablespoon parmesan cheese
- 1 teaspoon mixed herbs
- serves 2
Directions:
- Dry fry garlic and onion in fry pan. Add mixed vegetables and cook.
- Add spring onion and parsley.
- Beat eggs and water. Add to vegetables, cook on medium until set.
- Sprinkle with parmesan cheese and mixed herbs and black cracked pepper and grill under hot griller until browned. Add pepper to taste.
