Spanish Omelette

Ingredients:

  • 1 clove garlic, crushed
  • 1 medium onion, finely chopped
  • 2 cups mixed fresh vegetables
  • 2 spring onions, sliced
  • 1 tablespoon chopped parsley
  • 2 eggs and 1 egg white
  • 3 tablespoons water
  • 1 tablespoon parmesan cheese
  • 1 teaspoon mixed herbs
  • serves 2

Directions:

  1. Dry fry garlic and onion in fry pan. Add mixed vegetables and cook.
  2. Add spring onion and parsley.
  3. Beat eggs and water. Add to vegetables, cook on medium until set.
  4. Sprinkle with parmesan cheese and mixed herbs and black cracked pepper and grill under hot griller until browned. Add pepper to taste.
