Prawn Salad

Ingredients:

  • 100gms button mushrooms
  • 100gms prawns (shelled)
  • 1 tablespoon julienned strips of fresh ginger
  • watercress sprigs for garnish

Ginger Dressing:

  • 2 teaspoons low-fat mayonnaise
  • 2 teaspoon apple cider vinegar
  • 4 drops soy sauce
  • 1 teaspoon grated fresh ginger
  • 1 small clove garlic, crushed
  • serves 1

Directions

  1. Place all dressing ingredients in bowl and whisk until it thickens.
  2. Wipe mushrooms with damp cloth. Remove veins from prawns.
  3. Toss mushrooms, prawns and ginger with dressing and garnish with watercress.
