Chicken and Nectarine Salad

Ingredients:

  • 500g skinless chicken fillets
  • curry mayonnaise (see next recipe)
  • 2 medium nectarines, firmly ripe
  • salad mix
  • 2 red or orange banana capsicums
  • 2 small zucchini (yellow or green)
  • 2 sticks celery
  • serves 4

Directions:

  1. Place chicken in baking dish sprayed or brushed lightly with oil. Add freshly milled black pepper. Cover loosely with baking paper and bake in hot oven approximately 15-20 minutes. Timing depends on size and thickness of fillets.
  2. Remove from oven and let rest for at least 20 minutes before slicing.  Slice chicken and mix with curry mayonnaise and slivered nectarine. Serve on bed of salad leaves. Slice or shred the vegetables and scatter over salad.
