Moon Burgers
Ingredients:
- 400gm lentils (drained)
- 125gm sweet corn (drained)
- 2 spring onions, chopped
- 2 cups cold mashed potato
- 1 grated carrot
- 2 tablespoons chopped fresh herbs
- 1 egg, lightly beaten
- ¼ cup fresh breadcrumbs
- serve 6
Directions
- Combine all ingredients in a large bowl and mix well. Divide into six patties and refrigerate for thirty minutes.
- Bake in a hot oven until browned and heated through. Remove from oven.
- Serve moon burgers in a burger bun, and add whatever you like – pineapple rings, sliced beetroot, tomato slices, lettuce leaves and tomato sauce.
