Moon Burgers

Ingredients:

  • 400gm lentils (drained)
  • 125gm sweet corn (drained)
  • 2 spring onions, chopped
  • 2 cups cold mashed potato
  • 1 grated carrot
  • 2 tablespoons chopped fresh herbs
  • 1 egg, lightly beaten
  • ¼ cup fresh breadcrumbs
  • serve 6

Directions

  1. Combine all ingredients in a large bowl and mix well. Divide into six patties and refrigerate for thirty minutes.
  2. Bake in a hot oven until browned and heated through. Remove from oven.
  3. Serve moon burgers in a burger bun, and add whatever you like – pineapple rings, sliced beetroot, tomato slices, lettuce leaves and tomato sauce.
