St Louis Salad
Ingredients:
- 1/4 cup tomato juice
- 1 cup low fat cottage cheese or ricotta
- 1 egg, hardboiled and chopped roughly
- 1 teaspoon Dijon mustard
- 400gms prawns, shelled (with tails on)
- 2 cups peeled, seeded
- cucumber, cut in chunks
- 1 cup finely sliced red pepper
- cos lettuce
- 1 orange, peeled and cut into segments
- serves 4
Directions:
- Combine cottage cheese, egg, mustard and tomato juice in blender, and blend till smooth.
- Line 4 serving bowls with cos lettuce leaves and carefully arrange cucumber, orange segments, prawns and red pepper inside leaves.
- Pour over dressing. Garnish with mint and finely sliced orange zest.
