St Louis Salad

Ingredients:

  • 1/4 cup tomato juice
  • 1 cup low fat cottage cheese or ricotta
  • 1 egg, hardboiled and chopped roughly
  • 1 teaspoon Dijon mustard
  • 400gms prawns, shelled (with tails on)
  • 2 cups peeled, seeded
  • cucumber, cut in chunks
  • 1 cup finely sliced red pepper
  • cos lettuce
  • 1 orange, peeled and cut into segments
  • serves 4

Directions:

  1. Combine cottage cheese, egg, mustard and tomato juice in blender, and blend till smooth.
  2. Line 4 serving bowls with cos lettuce leaves and carefully arrange cucumber, orange segments, prawns and red pepper inside leaves.
  3. Pour over dressing. Garnish with mint and finely sliced orange zest.
