Florentine Timbales

Ingredients:

  • 1 bunch English spinach, washed well
  • 220gms finely chopped chicken
  • 100gms low fat ricotta cheese
  • 2 tablespoons finely chopped spring onion
  • 2 tablespoons finely chopped Italian Parsley
  • 1 teaspoon nutmeg
  • 1 egg
  • freshly ground black pepper
  • serves 4

Directions:

  1. Microwave or boil well washed spinach until just wilted. Drain carefully and cool.
  2. Choose the largest leaves to line four souffle dishes (or ovenproof tea cups). Leave some leaves of spinach overhanging, to fold over once filling is placed in dish.
  3. Place remaining spinach (well drained) into blender or processor with remaining ingredients and blend. Pour mixture into dishes and fold spinach leaves over to seal entirely.
  4. Place dishes in a baking dish and pour in enough water to come 1/4 way up dishes.
  5. Bake at 180C for 35 minutes. Turn out onto plate and garnish. Serve with a green salad.
