Devilled Tuna

Ingredients:

  • 450gms canned tuna in water
  • 1 finely chopped green capsicum
  • 1 finely chopped onion
  • 3/4 cup tomato puree
  • 1 teaspoon mustard
  • 1 teaspoon lemon juice
  • 2 tablespoons chopped parsley
  • serves 4

Directions:

  1. Cook capsicum and onion in a small amount of water until tender.
  2. Add tomato puree, seasonings and lemon juice. Add tuna.
  3. Pour mixture into casserole dish and re-heat in hot oven for 15 minutes.
  4. Garnish with parsley. Serve with a green salad. Serves 4.
