Curry Mayonnaise

Ingredients:

  • one tablespoon finely chopped white onion
  • one clove garlic, crushed
  • two teaspoon curry powder
  • one teaspoon yellow mustard seeds
  • one cup tomato juice
  • half cup water
  • strip lemon peel
  • half a cup of low-fat yoghurt

Directions

  1. Dry fry onion and garlic. Add curry powder and yellow mustard seeds and cook few minutes longer.
  2. Add tomato juice, water and strip lemon peel.
  3. Boil for a few minutes uncovered, until reduced to ¾ cup.
  4. Cool then mix with low-fat yoghurt.

Serve over chicken or fish.

Note: Mangoes are also delicious with this recipe.
