Crab San Choy Bow

Ingredients:

  • 200gms canned crab meat, drained
  • 1 cup non-fat yoghurt
  • 2 tablespoons lemon juice
  • 2 teaspoons shallots or spring
  • onions, chopped
  • 1/4 teaspoon red paprika
  • 1/4 cup very fine julienne carrot,
  • red capsicum and green capsicum
  • serves 2

Directions:

  1. Flake crab meat with a fork.
  2. Combine yoghurt, lemon juice and paprika.
  3. Fold through crab meat and remaining ingredients.

Serve in a lettuce cup.
