Banana Brunch

Ingredients:

  • 1 small orange
  • 1/2 cup alfalfa sprouts
  • shredded lettuce
  • 2 tablespoons cottage cheese
  • small lady finger banana, sliced on diagonal
  • 1 teaspoon sesame seeds
  • serves 1

Directions:

  1. Using a metal zester blade, remove strips from orange peel. Reserve for garnish.
  2. Peel orange over a bowl to catch juice and divide into segments.
  3. Line plate with shredded lettuce, arrange sprouts in centre and top with cottage cheese.
  4. Arrange orange and banana around alfalfa sprouts. Sprinkle reserved juice over cheese and fruit and sprinkle sesame seeds over.
  5. Garnish with orange zest.
