Banana Brunch
Ingredients:
- 1 small orange
- 1/2 cup alfalfa sprouts
- shredded lettuce
- 2 tablespoons cottage cheese
- small lady finger banana, sliced on diagonal
- 1 teaspoon sesame seeds
- serves 1
Directions:
- Using a metal zester blade, remove strips from orange peel. Reserve for garnish.
- Peel orange over a bowl to catch juice and divide into segments.
- Line plate with shredded lettuce, arrange sprouts in centre and top with cottage cheese.
- Arrange orange and banana around alfalfa sprouts. Sprinkle reserved juice over cheese and fruit and sprinkle sesame seeds over.
- Garnish with orange zest.
