Mushroom Caviar

Ingredients:

  • 1 onion
  • 1 clove garlic
  • 375gms button mushrooms
  • 2 tablespoons tofu
  • 1-2 tablespoons lemon juice
  • 1 tablespoon chives, chopped
  • ground black pepper

Directions:

  1. Finely chop onion and garlic and saute in non-stick frypan until soft.
  2. Wipe 375 gms (12 oz.) button mushrooms and chop finely. Add to onion, cook quickly until soft and liquid has evaporated.
  3. Stir in 2 tablespoons tofu (blended), 1-2 tablespoons lemon juice and 1 tablespoon chopped chives, ground black pepper to taste.

Chill to serve.
