Mushroom Caviar
Ingredients:
- 1 onion
- 1 clove garlic
- 375gms button mushrooms
- 2 tablespoons tofu
- 1-2 tablespoons lemon juice
- 1 tablespoon chives, chopped
- ground black pepper
Directions:
- Finely chop onion and garlic and saute in non-stick frypan until soft.
- Wipe 375 gms (12 oz.) button mushrooms and chop finely. Add to onion, cook quickly until soft and liquid has evaporated.
- Stir in 2 tablespoons tofu (blended), 1-2 tablespoons lemon juice and 1 tablespoon chopped chives, ground black pepper to taste.
Chill to serve.
