Hollandaise Sauce

Ingredients:

  • 1 egg
  • 1 tablespoon hot water
  • 1 tablespoon lemon juice

Directions:

  1. In a small double boiler top whisk egg until smooth.
  2. Add water and lemon juice. Beat over gently simmering water until thick - about 5-7 minutes.
  3. Serve over vegetables, or use over chicken or fish, or to make Eggs Benedict.
