Raspberry Marbled Mousse

Ingredients:

  • 2 cups raspberries
  • 2 teaspoons caster sugar
  • 1 tablespoon gelatine
  • 1/4 cup hot water
  • 1 carton “Light Fruche”
  • serves 4

Directions:

  1. Blend raspberries.
  2. Add sugar and blend again to combine.
  3. Combine gelatine and hot water in small bowl and add to raspberry mixture.
  4. Chill until just beginning to set. Add fruche and swirl with a knife to create marbled
    effect.
  5. Pour carefully into four dessert dishes and refrigerate until set. Garnish with mint.
