Peach and Melon Freeze

Ingredients:

  • 3 cups frozen mixed fruit (peaches, melon, mango)
  • ˝ cup non fat yoghurt
  • 1 tablespoon fresh lemon juice
  • serves 4

Directions:

  1. Prior to freezing fruit, remove skins from peaches by plunging into boiling water, then iced water. This allows skin to slip off easily.
  2. Remove rind from melon and mango and chop roughly.
  3. Place all on a flat tray to freeze. Once frozen, fruit can be placed in a freezer bag.
  4. To prepare “freeze” place frozen fruit in blender and chop roughly to combine. With machine running, slowly add yoghurt and lemon juice.
  5. Place into individual serving dishes and return to freezer for just 10 minutes prior to serving.
