Peach and Melon Freeze
Ingredients:
- 3 cups frozen mixed fruit (peaches, melon, mango)
- ˝ cup non fat yoghurt
- 1 tablespoon fresh lemon juice
- serves 4
Directions:
- Prior to freezing fruit, remove skins from peaches by plunging into boiling water, then iced water. This allows skin to slip off easily.
- Remove rind from melon and mango and chop roughly.
- Place all on a flat tray to freeze. Once frozen, fruit can be placed in a freezer bag.
- To prepare “freeze” place frozen fruit in blender and chop roughly to combine. With machine running, slowly add yoghurt and lemon juice.
- Place into individual serving dishes and return to freezer for just 10 minutes prior to serving.
