Green Fruit Salad with Ginger Cream
Ingredients:
- 3 Granny Smith apples, unpeeled and cut into small dice
- 3 kiwi fruit peeled and cut into small dice
- 1 honeydew melon, peeled, seeded and cut into small dice
- green sultana grapes
- 1 teaspoon lime cordial
- juice of one lemon
- serves 6
Ginger Cream:
- ½ tablespoon ginger marmalade (or ½ sample jar of Nelson’s marmalade)
- 400gms (or two tubs) Light Lemon Fruche or Lime Orange Fruche
Directions:
- Cut up fruit and place in large bowl and fold through lime cordial and lemon juice.
- Fold marmalade through Lemon Fruche and serve in a separate dish to dollop over the fruit salad.
- Garnish with fresh mint.
