Green Fruit Salad with Ginger Cream

Ingredients:

  • 3 Granny Smith apples, unpeeled and cut into small dice
  • 3 kiwi fruit peeled and cut into small dice
  • 1 honeydew melon, peeled, seeded and cut into small dice
  • green sultana grapes
  • 1 teaspoon lime cordial
  • juice of one lemon
  • serves 6

Ginger Cream:

  • ½ tablespoon ginger marmalade (or ½ sample jar of Nelson’s marmalade)
  • 400gms (or two tubs) Light Lemon Fruche or Lime Orange Fruche

Directions:

  1. Cut up fruit and place in large bowl and fold through lime cordial and lemon juice.
  2. Fold marmalade through Lemon Fruche and serve in a separate dish to dollop over the fruit salad.
  3. Garnish with fresh mint.
