Fruit Terrine

Ingredients:

  • 375 ml unsweetened apple juice
  • 3 teaspoons gelatine dissolved in 3 tablespoons hot water
  • Assortment of seasonal fruits, such as: thinly sliced oranges, sliced banana, hulled strawberries, seedless grapes, blueberries, sliced peaches or sliced apples.
  • serves 4

Directions:

  1. Rinse a non stick loaf pan with cold water.
  2. Combine apple juice with dissolved gelatine. Pour a little over base of pan. Refrigerate until set.
  3. Place a layer of fruit over set jelly, pour a little more apple jelly over top, refrigerate until firm. Keep jelly warm in between layering. Continue adding layers of fruit and jelly, refrigerating each layer until set. Ensure last layer of fruit is completely covered with jelly.
  4. Set overnight. Cut into 6 to 8 slices, decorate with mint leaves.
