Citrus Bread Pudding

Ingredients:

  • 12 slices stale white bread
  • 3 eggs, lightly beaten
  • 1/2 cup sugar
  • 1 teaspoon vanilla essence
  • 2 teaspoon grated lemon rind
  • 1 /2 cups skim milk
  • ground cinnamon or nutmeg
  • Lemon spread:
  • 1/2 cup lemon juice
  • 2 teaspoons cornflour
  • 2 teaspoons sugar
  • serves 4

Directions:

  1. Combine eggs, sugar, vanilla and rind in a bowl and whisk in the milk. Cut bread into rounds, using a 9-centimetre cutter. Spread each round with the lemon spread.
  2. To make the lemon spread, combine all the ingredients for spread and simmer over a low heat, stirring constantly. Allow to cool before spreading over each round of bread.
  3. To assemble the pudding, place bread rounds in individual oven-proof dishes. Carefully pour half the custard mix over the bread and let stand for 10 minutes.
  4. Pour remaining custard mix into the dishes and sprinkle with cinnamon or nutmeg. Place dishes in a baking pan half-filled with water.
  5. Bake at 180°C for 40 minutes or until set.
