Berry Sherbet

Ingredients:

  • 1 cup blueberries or other berries of choice
  • 1 cup water
  • 1 teaspoon lemon juice
  • 2 egg whites
  • serves 1

Directions:

  1. Cook berries in water for 10 minutes. Add lemon juice. Pour in blender and puree. Return to saucepan.
  2. Beat egg whites until stiff. Reheat berry mixture to boiling.
  3. Continue beating egg whites while adding berry mixture in a thin stream. Beat several minutes. Pour into cup or mould.
  4. Cover and freeze for 2 hours. Stand at room temperature for 10 minutes.
