Berry Sherbet
Ingredients:
- 1 cup blueberries or other berries of choice
- 1 cup water
- 1 teaspoon lemon juice
- 2 egg whites
- serves 1
Directions:
- Cook berries in water for 10 minutes. Add lemon juice. Pour in blender and puree. Return to saucepan.
- Beat egg whites until stiff. Reheat berry mixture to boiling.
- Continue beating egg whites while adding berry mixture in a thin stream. Beat several minutes. Pour into cup or mould.
- Cover and freeze for 2 hours. Stand at room temperature for 10 minutes.
