Autumn Berry Fruit Flan
Ingredients:
- 1 medium sponge flan base
- 250 gms Blue Cow Light Cream Cheese
- finely grated rind and juice of lemon
- 250 ml Lemon Lite Fruche
- 1 punnet raspberries
- 1 punnet strawberries (cut in half)
- 1 punnet blueberries
- serves 8
Directions:
- A special glaze is obtainable from your supermarket to brush over the assembled cake according to directions on the packet. We recommend the ‘Dr Oetker’ brand. Prepare according to directions on the packet.
- For the base, purchase a readymade sponge flan base from your supermarket.
- Process raspberries in a blender and spread over the base of the flan.
- Beat cream cheese with Lemon Lite Fruche and lemon rind and juice. Pour over raspberries.
- Arrange blueberries and strawberries over lemon filling.
- Brush with glaze. Refrigerate until serving time.
