Apricots Ambrosia
Ingredients:
- 2 cups water packed apricots, drained
- 2 egg whites beaten stiff
- Dash of vanilla or brandy essence
- serves 4
Directions:
- Puree apricots until smooth.
- Fold into beaten egg whites.
- Spoon into glasses. Decorate with strawberry.
- Apple puree may be substituted for apricots.
