Apricots Ambrosia

Ingredients:

  • 2 cups water packed apricots, drained
  • 2 egg whites beaten stiff
  • Dash of vanilla or brandy essence
  • serves 4

Directions:

  1. Puree apricots until smooth.
  2. Fold into beaten egg whites.
  3. Spoon into glasses. Decorate with strawberry.
  4. Apple puree may be substituted for apricots.
