Apple & Rhubarb Sponge
Ingredients:
- 1 bunch rhubarb, sliced on diagonal and 4 Granny Smith apples cut into eighths - stewed until soft, or microwaved
- 200ml skim milk
- 4 tablespoons skim milk powder
- 1 tablespoon caster sugar
- 1 teaspoon vanilla essence
- 75gms Self Raising Flour
- 2 egg whites
- serves 4
Directions:
- Sprinkle fruit with sugar.
- Pre-heat oven to 220C.
- Place fruit in a shallow baking dish.
- Pour milk, powdered milk, vanilla, flour and egg white into processor. Process till smooth.
- Pour batter over fruit.
- Bake 25-30 minutes until risen and golden. Serve immediately.
