Apple & Rhubarb Sponge

Ingredients:

  • 1 bunch rhubarb, sliced on diagonal and 4 Granny Smith apples cut into eighths - stewed until soft, or microwaved
  • 200ml skim milk
  • 4 tablespoons skim milk powder
  • 1 tablespoon caster sugar
  • 1 teaspoon vanilla essence
  • 75gms Self Raising Flour
  • 2 egg whites
  • serves 4

Directions:

  1. Sprinkle fruit with sugar.
  2. Pre-heat oven to 220C.
  3. Place fruit in a shallow baking dish.
  4. Pour milk, powdered milk, vanilla, flour and egg white into processor. Process till smooth.
  5. Pour batter over fruit.
  6. Bake 25-30 minutes until risen and golden. Serve immediately.
