Texan Breakfast Potatoes
Ingredients
- 2 medium potatoes cubed
- 1 tablespoon chopped, fresh parsley
- 1 medium onion chopped
- 1/2 teaspoon black pepper
- 1/2 cup red capsicum diced
- 1 clove garlic crushed
- 1/2 teaspoon dill weed
- water

Directions
- In non-stick fry pan or wok, brown potatoes for about 5 minutes on high.
- Add onion, capsicum, garlic and dill weed along with 1/4 cup water. Cook on high about 2 minutes longer then reduce heat to medium, adding black pepper, fresh parsley and a cup of water.
- Once water starts to boil again, place lid on pan and let cook until potatoes are tender. Add small amounts of water if needed.
