Texan Breakfast Potatoes

Ingredients

  • 2 medium potatoes cubed
  • 1 tablespoon chopped, fresh parsley
  • 1 medium onion chopped
  • 1/2 teaspoon black pepper
  • 1/2 cup red capsicum diced
  • 1 clove garlic crushed
  • 1/2 teaspoon dill weed
  • water
  • serves 2

Directions

  1. In non-stick fry pan or wok, brown potatoes for about 5 minutes on high.
  2. Add onion, capsicum, garlic and dill weed along with 1/4 cup water. Cook on high about 2 minutes longer then reduce heat to medium, adding black pepper, fresh parsley and a cup of water.
  3. Once water starts to boil again, place lid on pan and let cook until potatoes are tender. Add small amounts of water if needed.
