Herbed Scrambled Eggs

Ingredients

  • 2 eggs
  • 1/4 cup skim milk
  • 1 teaspoon chives
  • 1 small tomato, finely chopped
  • 1 teaspoon chopped parsley
  • 2 slices toast
  • serves 2

Directions

  1. Beat eggs and milk until light and fluffy. Add herbs and tomato.
  2. Scramble in a non-stick pan and serve on toast.
  3. Microwave method: Mix egg, milk, tomato and herbs. Microwave on HIGH for 1 minute. Stir and microwave on HIGH for 45 seconds.
