Herbed Scrambled Eggs
Ingredients
- 2 eggs
- 1/4 cup skim milk
- 1 teaspoon chives
- 1 small tomato, finely chopped
- 1 teaspoon chopped parsley
- 2 slices toast
- serves 2
Directions
- Beat eggs and milk until light and fluffy. Add herbs and tomato.
- Scramble in a non-stick pan and serve on toast.
- Microwave method: Mix egg, milk, tomato and herbs. Microwave on HIGH for 1 minute. Stir and microwave on HIGH for 45 seconds.
