Breakfast In A Bun
Ingredients
- 1 soft wholemeal roll
- 1 teaspoon low fat cottage cheese
- 1 egg
- serves 1
- Variation - add
spinach if desired.
Directions
- Cut a slice off the top of the roll, and hollow out the centre (save remaining bread for breadcrumbs or for the birds). Spoon cottage cheese into hollow and break egg carefully into hollow. Prick yolk and white with a toothpick and replace “lid”. Microwave on “high” for 1 1/2 minutes.
- This recipe is good hot for breakfast, or take to work and eat cold for lunch with a big green salad.
