Blueberry Pancakes
Ingredients
- 1 tablespoon plain flour, 1 egg
- 1/2 cup skim milk, 1/2 cup frozen gourmet blueberries
- Any fruit may be used, eg. apples, raspberries
- serves 1
Directions
- Place flour in a small bowl, make a “well” in flour and add egg.
- Gradually beat in milk, and mix till smooth.
- Heat non stick fry pan, pour mixture in and sprinkle over de-frosted blueberries. When mixture bubbles, turn over and brown other side. Serve with non-fat yoghurt or Light Fruche.
