Banana Muffins

Ingredients

  • 11/4 cups wholemeal plain flour
  • 11/4 cups wholemeal SR flour
  • 1 teaspoon bicarb soda
  • 1/4 cup raw sugar
  • 2 large bananas mashed
  • 3 tablespoons apple sauce
  • 1 egg, 1 cup skim milk
  • 1 muffin per serve

Directions

  1. Combine flours and bicarb and sugar.
  2. Make a well in centre of dry ingredients and add bananas, apple sauce, egg and milk. Mix until combined. Do not over-mix.
  3. Place spoonfuls of mixture into muffin tins lined with baking paper.
  4. Bake at 180C for 20-25 minutes.
