Banana Muffins
Ingredients
- 11/4 cups wholemeal plain flour
- 11/4 cups wholemeal SR flour
- 1 teaspoon bicarb soda
- 1/4 cup raw sugar
- 2 large bananas mashed
- 3 tablespoons apple sauce
- 1 egg, 1 cup skim milk
- 1 muffin per serve
Directions
- Combine flours and bicarb and sugar.
- Make a well in centre of dry ingredients and add bananas, apple sauce, egg and milk. Mix until combined. Do not over-mix.
- Place spoonfuls of mixture into muffin tins lined with baking paper.
- Bake at 180C for 20-25 minutes.
