Yummy Apricot Muffins
Ingredients
- 1 cup diced apricots (dried)
- 1 cup self raising wholemeal flour
- 1 lightly beaten egg
- 2 tablespoons puree apple (baby jar)
- 1 cup boiling water
- 1 cup self raising flour
- 1 cup apricot nectar
- 1 tablespoon raisins or sultanas
- serves 12
Directions
- Stand dried apricots in boiling water for 30 minutes. Drain well.
- Sift flours, add apricots and raisins. Combine in separate bowl, egg and apricot nectar and apple puree.
- Pour liquid ingredients into dry ingredients and stir until just combined.
- Spoon into lined muffin tray and bake at 180C for 30 minutes or until cooked.
