Yummy Apricot Muffins

Ingredients

  • 1 cup diced apricots (dried)
  • 1 cup self raising wholemeal flour
  • 1 lightly beaten egg
  • 2 tablespoons puree apple (baby jar)
  • 1 cup boiling water
  • 1 cup self raising flour
  • 1 cup apricot nectar
  • 1 tablespoon raisins or sultanas
  • serves 12

Directions

  1. Stand dried apricots in boiling water for 30 minutes. Drain well.
  2. Sift flours, add apricots and raisins. Combine in separate bowl, egg and apricot nectar and apple puree.
  3. Pour liquid ingredients into dry ingredients and stir until just combined.
  4. Spoon into lined muffin tray and bake at 180C for 30 minutes or until cooked.
