Understanding Ingredient Names

When there can be scores of names for humble sugar, little wonder things are a bit confusing for the poor consumer!  Here is a quick low-down on fats, sugars and salts.

(Don't forget salt! Quite often we focus on sugar and fat to the exclusion of other considerations).

Butter

  • Vegetable oil/fat
  • Animal fat/oil
  • Shortening/margarine
  • Copha
  • Lard
  • Tallow
  • Coconut oil
  • Palm oil
  • Butter fat
  • Milk solids
  • Monoglycerides
  • Diglycerides
  • Chocolate
  • Chocolate chips
  • "Creamed", "toasted" may indicate added fat.  Nuts can add a high fat content to foods.
